around here :: january 2017

I haven’t written an “Around Here” post in a long time, so I wanted to start out 2017 by reviving this semi-consistent Letters from the Nest tradition from a few years ago. It’s fun and stress free to simply share what we’ve been doing this month, after all of the heavy content that has been shared online lately. So, all I’m going to talk about in this post is about books I’ve been reading and my new favorite outfit, so can go ahead and take those thinking caps OFF. You are welcome.

Watching // Y’all know that we are Netflix obsessed around here (read this post for our current faves) so we are always open to trying a new series on Netflix. I still need to finish House of Cards before the new season releases in May…

Reading // The two books I’ve read in January are Room by Emma Donoghue and Present Over Perfect by Shauna Niequist. Two totally different reads; Room is fiction and is about a young woman who was kidnapped and raped, and subsequently births a child in the shed in which her captive keeps her, Room is told from the five year old boy’s perspective. Chilling. Present Over Perfect is non-fiction and fourth in the series of short story works by Shauna Niequist, an author and speaker I have followed for quite some time. (To find out what I read in 2016, click here)

Wearing // Okay, so I have a little obsession with the boutiques in town, and this month I can’t get enough of my red and black flannel heart shirt and red puffy vest from Southern Sass Boutique. I have worn that combo more times than I can count and I am not ashamed. Hashtag shop local.

Listening // I am a huge fan of podcasts, and currently I am loving Mom Struggling Well (I was a guest on her podcast last year, my episode is (here) ) and Inspired to Action is an old favorite!

Making // Anything and everything in the crock pot. Eden’s Tuesday night dance classes are getting us home later, so crock pot it is on dance nights for sure. (and I am slowly stalking you Instant Pot people! Show me your ways!) And Shrimp Pesto Pasta is literally the easiest meal ever and I get all three ingredients from Trader Joe’s and we love it.

Feeling // Excited about this year. We have settled in to our new roles as full time working mom and public school kids, so I’d like to see us grow and thrive in those roles this year, and stay put for a while. I think these changes have breathed life into our family, and we are excited for the future.

Planning // Our year at work. I really want to celebrate at the Chamber this year, so we are in the processes of planning ribbon cuttings and other events for the 2017 year. (Want to join our Chamber of Commerce? Send me an email and let’s chat!)

Loving // Our new baby goats. Have you been following Chandler and Monica on my Instagram? They are the cutest, and if you want to keep up with all of the farm pics, my Instagram is here and search the hashtag #elkinsfamilyfarm.

That is all for January! If you have missed any Letters from the Nest posts in January, they are (here), and (here).

  1. Christie, we live in Soith Dakota on a tiny little market farm. I love reading your blog. We were driving throughKnoxville yesterday on our way home from an Ag convention and I couldn’t help but wish I could find your sweet little farm and sto to chat for awhile!! Thanks for entertaining, inspiring and motivating us all!! Blessings! ❤️

  2. Shrimp pesto pasta: is it really only three ingredients? I can’t find a recipe with less than seven! We love Trader Joe’s as well and my new favorite crockpot dish is chicken enchilada soup. Goes together in less than five minutes. Serve it with the corn chip dippers from Trader Joe’s and some shredded cheddar cheese and it is a major hit!

    1. That sounds amazing! Thank you for the idea! What I use in the shrimp pesto pasta are two bags of the medium tail off frozen shrimp, the chive noodles (they look green in the package!) and a jar of the pesto sauce that I mix with olive oil. I get all of it from TJ’s, and a side of bread or sometimes a salad. Delish!
